Healthy Chicken Salad Recipe
A healthy twist on a traditional chicken salad recipe that adds tons of flavor with less fat and calories. The secret is to use nonfat Greek yogurt in place of regular mayonnaise. Making this simple substitution will save you over 300 calories and almost 40 grams of fat for the whole recipe! The result is still super creamy and delicious, but without any of the guilt.
Ingredients for Healthy Chicken Salad:
- 2 cups chicken
- 1/4 cup green grapes
- 1/4 cup slivered almonds
- 1/4 cup dried cranberries
- 1/2 cup plain nonfat Greek yogurt
- salt & pepper to taste
Directions:
Cube
Cut chicken into bite-size pieces. I like to start with a rotisserie chicken from the super market or use yesterday’s leftovers.
Add
Add 1/4 cup green grapes, 1/4 slivered almonds, 1/4 dried cranberries
Add
Add 1/2 cup plain nonfat Greek yogurt & salt and pepper
Mix
Combine all of the ingredients
Serve
Serve as a sandwich, salad, or with crackers
